New Apple Video iPod?
Gizmodo reports that Apple has filed touchscreen patents that look to be used in the next gen iPod, then adds a mock-up that has been floating around the internet of what the next gen iPod might look like using these patents and a virtual scroll wheel. Tasty!

As they have shown, I think it's safe to say that Apple will continue to innovate their consumer electronics to the point of obsolescence for their own older product lines.
Look at the iPod itself. There are like 6 or 7 generations of iPod's out there and the iPod is only a few years old. Apple is doing its best to be the one that tops itself rather than giving the competition a chance. An iPhone is probably not to far away now (the ROKR doesn't count), unless their intent is to integrate it into an upcoming version of an iPod. Theoretically, the only thing stopping them from doing that now is the fact that they would have to partner with a carrier, and currently all the carriers are intent on milking us for all we got by charging 3X for a song download using their bandwidth and disabling or hobbling compatibility with any external music download services.
Now, if Apple were to create it's own cellular network (or hey, maybe a VOIP network), that would solve that problem and they would be the master of their entire domain again, which is what they prefer.
Either way, I don't see anyone one-upping Apple severely enough to knock it off the top of the heap anytime soon (which is why I have a few shares of Apple).
